It’s my favorite time of the week where Jeff logs off and I get to blog about one of my favorite things: food! This week I’m obsessed with the fun phenomena– breakfast for dinner, or b4d as we call it at our house. This idea was received with nothing but cheers when announced and our meal ended with just the same enthusiasm. Whether you want to do b4d or b4b here’s a bunch of fun breakfast recipes.

Dutch Baby Pancake (Oven Pancake)
3 tablespoons unsalted butter, room temperature
3 large eggs
3/4 cup raw milk
1 c. almond flour (spooned and leveled)
1/4 teaspoon salt
1/2 teaspoon pure vanilla extract
2 Tbs. maple syrup

Preheat oven to 425 degrees. In a medium cast-iron or ovenproof nonstick skillet, melt 2 tablespoons butter over medium heat; set aside.

In a blender, combine eggs, milk, flour, salt, vanilla, and maple syrup. Blend until foamy, about 1 minute. Pour batter into skillet; bake until pancake is puffed and lightly browned, about 20 minutes.

Working quickly, dot pancake with 1 tablespoon butter.

Here’s another goody:
Gluten-Free Waffles
2 eggs
1 Tbs. pure maple syrup
1 Tbs. vanilla extract
1 1/2 c. almond flour
1/2 tsp. sea salt
1/2 tsp. baking soda
4 Tbs. water or more as batter thickens

In a blender combine eggs, syrup, vanilla and blend until smooth. Add almond flour, salt, baking soda, and water, blend again to incorporate dry ingredients into batter. Continue to add water as needed.

These waffles also make great little silver dollar pancakes!

*Warning! Your egg count will get all whack after b4d!
