Paleo Pizza

It’s a bird, it’s a plane, it’s Paleo Pizza! This recipe and I have a love/hate relationship. I hated it when I first started making it, but love it so when it cooperates with me! If you haven’t experimented with this recipe definately do, it’s worth the effort.

Steam 1 head of organic cauliflower.

Combine in a food processor: 2 cups of steamed cauliflower (I just used 1 head, I’m not sure if it was more, less, or right on the amount. The smaller the head, the better the crust seems to turn out)

Combine in a bowl:

2 cups of shredded whole-milk mozzarella
2 pastured eggs
processed cauliflower
Italian seasonings to taste, or any other flavors you want to add to your crust

Stir until everything is mixed.

Then, line a pizza pan with parchment paper and dump the sticky stuff on it, and spread into a large circle with a spatula.

Bake the crust at 450 degrees for about 30 – 45 minutes or until it’s firmed up a bit and and light brown. The key to this recipe is cooking the crust as long as possible. Take time to finish this step because you’ll actually be able to pick up your pizza once it’s done– like a real glutenous crust.

Add your sauce, cheese, and toppings – for sauce I use Trader Joe’s Puttanesca sauce, it’s pretty legit. We topped it with lots of mozzarella, salami, and mushrooms.

Pop it back in the oven, and broil for a few minutes until your cheese is melted.

Since this pic, I’ve learned to cook my crust (the first baking) just a little longer. The darker the crust the better, I think.
