The Magster’s Monkey Junk

Doesn’t this dessert look awesome? Mags created this sweet confection with the highest possible ingredients, you’ll be impressed! By combining Dawn’s Paleo Chocolate with JRo’s Monkey Junk she invented her own version of it…

Maggie’s Paleo Monkey Junk with Chunks of Raspberries a la Chocolate!

1 & 1/3 cups of almonds (chopped up a little)
2/3 cups of coconut flakes (the best ones are at the co-op)
1/3 of a cup coconut butter (you can find this at the co-op)
2 tablespoons cocoa powder
3 tablespoons raw honey
1/4 cup coconut oil
1/3 cup frozen raspberries

In a 8×8 pan mix up almonds, coconut flakes, coconut butter and cocoa powder.

In a small saucepan gently melt coconut oil and honey.

Chop up frozen raspberries.

Drizzle coconut/honey liquid over dry ingredients in pan.

Sprinkle raspberries over ingredients in pan.

Mix altogether and spread flat in pan. Freeze for twenty minutes. Break into chunks and serve.

Enjoy with raw milk, almond butter, plain whole yogurt, homemade ice cream…or even by itself!

  2. I’m enjoying some monkey junk as I type! I almost finished it off and then guilt struck me so I saved a tiny corner for Jeff when he gets off shift. He gets crabby if we finish all the monkey junk when he’s working!
