Noodle-less Lasagna

Beef! It’s what’s for dinner….in about two weeks when our grass-fed cows, raised by West Valley Beef, will be ready for our feasting. That sentence is particularly weird for me considering there were years where I didn’t eat any red meat at all. Here’s a great way to enjoy ground beef; it’s nice to smell the comforts of lasagna bubbling in your oven without all the grains!

Start out making a meat sauce. Here’s our basic sauce:
2 lbs. ground grass-fed beef
1 onion
1 garlic clove
mushrooms, green bell peppers, usually anything in the fridge
1 jar of tomato sauce. Trader Joes’s has a couple awesome premade sauces, Puttenesca Sauce and Roasted Garlic, that are legit and makes this sauce so easy to make.

Eggplant or Zucchini Noodle Prep:
Cut “noodles” into thin slices. Salt and pepper, and cook slightly. This lets the vegetable release a little bit of its juices, causing your lasagna to be slightly less watery in the end.

Build your layers:
Put a bit of meat sauce on the bottom of your baking dish
Put a layer of seasoned eggplant or zucchini down, just like noodles
Mix a carton of cottage cheese with an egg. Put half a mixture of cottage cheese mixture on top of eggplant
Load that up with mozzarella cheese

Repeat layers starting with meat sauce, until all ingredients are used, or you’ve just ran out of room

Bake @ 350 until bubbly! This is so yummy it’ll be hard to wait until it’s cooled down and set up a bit to dig into it!

  1. Just got done watching Hallee, Andrea, Kris & Casey compete in the Winter Challenge Team Competition. Tremendous effort by all four members of our team. I had almost as much fun watching them compete this morning as I did competiting yesterday, but it did not hurt as much (for me). They gave everything they had and then some. Just before a WOD involving a 1 rep max power clean, Casey & Hallee PR’d in their warm-up. Then they both went out and PR’d again during the actual WOD! I think Andrea & Kris PR’d either on their max overhead or the max power clean (two different WODs).

    All four of them never quit and gave a max effort on every WOD they did. No sacrifice of form to do it either. They all did really, really well and represented CrossFit Snohomish very well.

    I am very proud of all of guys. Take a day off and treat yourself well today, you earned it!!!
