Carb Bombs

Someone who’s carb conscience may look at this recipe and have a heart attack. I know when I saw this recipe months ago I passed it up thinking its way too carby for our house, after all a cup of dates! That’s 117.5 right there, not even adding in the nuts and the rest of the ingredients. There’s no way, I thought. Until I started running the numbers and it wasn’t as bad as I thought.

These are a tasty pre wod or post wod little snack which has tendencies like a Lara Bar. Apparently there’s this crazy world full of these little treats named: fudge babies, chocolate power balls, wod balls. From what I see, here’s the originator– check out how many variations she has! Anyway, make them, they’re good! And easy.

1 cup dates, pitted
2 cups walnut
½ cup quality dark chocolate chips, at least 73% cacao
1 tablespoon pure vanilla extract
¼ teaspoon celtic sea salt

Process all ingredients together until it appears crumbly. Measure out mixture with tablespoon scoop and roll into balls. They’re done!

The final carb count I got on this mixture was 173.5. Again, that sounds crazy until I got 21 balls of bombs, which left each bomb at 8.26 grams of carbs. Not bad!
