Banana Macadamia Nut Pancakes

I’m giving away some personal secrets letting this recipe out of the vault.  However, my people (5:30 am) loved them, so I thought I’d give it up.

2 pastured eggs

2 Tbs maple syrup

1 Tbs. vanilla extract

1 1/2 c. almond flour

1/2 tsp. celtic sea salt

1/2 tsp. baking soda

1/4 cup raw macadamia nuts, chopped

1 organic banana

1 tsp. cinnamon

In a blender combine eggs, syrup, vanilla and blend until smooth.  Add almond flour, salt, baking soda, nuts, banana, and cinnamon blend again to incorporate dry ingredients into batter.

Warm skillet up to low heat, add butter or other fat.  Ladle pancakes onto skillet, turn when bubbles form.

These pancakes brown pretty easily and will need to be cooked on low (although they still tasted good when burnt!)  They turned out best when made into silver dollar size.  You may find this batter to be thick, but I kinda like it like that.  If it’s too thick for you, just add water to the wet mixture until you’ve reached a consistency you enjoy.
